Cheesy Spinach Scrambled Eggs
1 tsp. water
1/2 c. baby spinach
1 green onion
5 egg
1/2 tsp. garlic powder
1/4 tsp. black pepper
1/2 tsp. sea salt
1/4 c. mild cheddar cheese
1 tsp. extra virgin olive oil
Add olive oil, water, spinach and onion in a small frying pan, cook covered over high heat until veggies are soft. Add eggs and seasonings and fold over and over with spatula until eggs are cooked. Remove from heat, sprinkle with cheese and cover until cheese is melted.
