This is one of my favorite vegitarian meals. Its really easy to make and its very filling. I usually cook the spinach before I place it onto the tortilla but it can also be eaten raw.
2 sprouted whole grain tortilla
1 c. baby spinach
1 c. shredded cheese
1 can black olives
2 tsp. extra virgin olive oil
1/4 c. black beans, cooked or canned, organic
Heat skillet over medium heat Coat skillet with EVOO Place tortilla on skillet and spread half of the shredded cheese first, then add spinach and olives Next, add the second half of shredded cheese over veggies and top with the second tortilla (you can also add black beans, but that's optional) Flip and then let it heat on the other side
*The oil should make the tortillas nice and crispy!
Vegetarians: Count would be 2 protein, 2 fats, 3 carbs.
