Spinach Pancakes

I know that it might sound weird at first, but these spinach pancakes are actually pretty good. You can't even really taste the spinach... it's just there to give the recipe color and make it healthier!

Ingredients

    1/2 c. old-fashioned oats

    1 c. spinach

    1 egg

    1 tsp. baking powder

    1 tsp. cinnamon

    1 tsp. vanilla extract

    2 stevia packet

    2 tbsp. almond milk

Directions

Combine oats, cinnamon, stevia (optional), and baking powder in a food processor. Blend until oats are turned into a powder and everything is well combined. Move mixture to a bowl.

Add a tightly packed cup of spinach to the food processor and blend until all leaves have been broken down. Remove spinach from food processor and add to dry ingredients.

Add egg and vanilla to oats/spinach and mixture. Add a few splashes of almond milk until it becomes pancake like batter. (Make sure to add little by little until it's batter consistency. Don't add too much at a time because then your mix become too watery.)

Grease a pan (on medium heat) with coconut oil and add your batter. Cook each side for 1-2 minutes or until each side has turn golden brown and middle is cooked through.
