Spinach Omelet

A simple omelet with nutritious greens!


    1 tsp. coconut oil

    1 c. spinach

    2 egg


Heat coconut oil in a small skillet over medium heat. Add torn or chopped spinach to the skillet; cook until wilted.

Lightly beat eggs in a small bowl. Add eggs to the skillet, and stir everything up. As the egg mixture sets, lift the edges to allow the uncooked portion to flow underneath. Cook until the egg mixture sets, about 10-15 minutes.
