A really fresh tasting, nutritious salad. The beans and spinach go surprisingly well together.
2 c. baby spinach
1/2 c. cooked chickpeas
2 tsp. lemon juice
2 tsp. extra virgin olive oil
sea salt & black pepper to taste
1 1/2 tbsp. manchego cheese
Tear spinach leaves into bite sized pieces, toss remaining ingredients together. A small amount of cheese adds another taste profile, but eliminate if desired. Make sure all ingredients are very fresh for best results.
