Stay full for hours with this protein-packed breakfast!
1/2 c. baby spinach
1/2 c. cooked quinoa
garlic to taste
sea salt & black pepper to taste
2 egg
2 tsp. coconut oil
Heat 1 teaspoon coconut oil in pan. Add spinach, cooked quinoa, and minced garlic to the pan. Season with salt and pepper, and fry until spinach is wilted. Set aside.
Heat 1 teaspoon coconut oil in pan. Add eggs to the pan, and fry however you like them.
Serve eggs over spinach-quinoa-garlic mix. Top with scallions (optional) and enjoy!
