Spinach, artichokes, pepperoni - what more could you want in a meatloaf?
1 tsp. extra virgin olive oil
2 c. spinach
1 egg
1/4 c. tomato sauce
2 tsp. garlic
1/4 c. almond flour
1 tsp. sea salt
1 tsp. black pepper
1 tsp. Italian seasoning
1 lbs. ground beef
1/2 c. artichoke hearts
15 turkey pepperoni
1/2 c. tomato sauce
1/2 c. mozzarella cheese
Preheat oven to 350ºF. Heat olive oil in a small skillet over medium-low heat. Add torn spinach to the skillet, and cook until dark green and wilted. Set aside.
Use a fork to lightly beat the egg in a bowl. Add ¼ cup tomato sauce, minced garlic, almond flour, and spices; mix well. Add ground beef to the bowl and mix it all up using hands. Add wilted spinach, chopped artichokes, and halved pepperoni.
Move mixture to a loaf pan and smooth out the top. Bake for 40 minutes.
Remove meatloaf from oven. Spread ½ cup tomato sauce on top (use a spoon or spatula to spread it out), and sprinkle shredded cheese on top of that. Return to the oven for an additional 10-15 minutes, until cheese is melted and starting to brown.
Remove from oven, and let sit for a couple minutes before cutting into the meatloaf.
