Chicken meatballs with spinach, artichokes, and parmesan cheese
2 clove garlic
1 lbs. ground chicken
1 egg
3 tbsp. coconut flour
1/4 c. parmesan cheese
1/2 tsp. red pepper flakes
2 tsp. extra virgin olive oil
2 c. spinach
2 c. artichoke hearts
Preheat oven to 400ºF. Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium heat. Add chopped spinach, chopped artichokes, and minced garlic; cook for 3-4 minutes, until spinach is wilted. Move mixture to a large bowl.
Add ground chicken, lightly beaten egg, coconut flour, parmesan cheese, and red pepper flakes to the bowl. Use hands to mix together until fully incorporated. Form mixture into 12 meatballs, arrange on baking sheet, and bake for 20-25 minutes.
