Spinach Artichoke Dip is one of the most popular appetizers one the menu at many restaurants. It is SO easy (and much healthier) to make at home, though… and it makes a delicious topping for chicken.
1/2 lbs. chicken breast, skin-on
5 oz. frozen spinach
4 oz. artichoke hearts
1/2 c. Greek yogurt
1/2 c. parmesan cheese
1 tsp. garlic powder
sea salt & black pepper to taste
Preheat oven to 375ºF.
Season chicken with salt and pepper and arrange in a baking dish. Bake for 15 minutes.
While chicken is baking, remove excess water from thawed spinach by squeezing it out with a tea towel or nut milk bag. Combine drained spinach artichoke hearts, Greek yogurt, grated Parmesan cheese, and garlic powder in a bowl and mix well. Pour mixture over chicken. Top with ¼ cup mozzarella cheese (optional). Bake for an additional 25 minutes.
