Spinach and Roasted Garlic Turkey Meatballs

The roasted garlic in this recipe gives the meatballs so much flavor.


    2 head garlic

    2 tbsp. extra virgin olive oil

    1 lbs. ground turkey

    2 c. baby spinach

    1/2 c. fresh parsley

    1 egg

    1/2 tsp. sea salt

    1/4 tsp. black pepper


Roast the garlic: Preheat oven to 400ºF. Cut tops of heads off garlic. Rub olive oil all over the heads. Wrap in foil and place on a baking sheet. Roast for 30-35 minutes, until garlic is caramelized and soft.

Meanwhile, line a baking sheet with parchment paper.

In a large bowl, combine ground turkey, chopped baby spinach, chopped fresh parsley, egg, sea salt, and pepper. Squeeze the roasted garlic heads to release the roasted garlic into the bowl. Mix it all up well (using your hands) until all ingredients are evenly distributed. Form mixture into balls, arrange on prepared baking sheet, and bake for 25-30 minutes, until cooked through.
