Refrigerate or freeze this meatloaf to re-heat and eat!
1 lbs. ground turkey
1 egg
1/4 c. almond flour
2 c. baby spinach
1/2 med. red bell pepper
1/2 tsp. chili powder
1/2 tsp. sea salt
1 clove garlic
1/2 tsp. dried oregano
2 tsp. coconut oil
Preheat oven to 350º F. Grease a loaf pan using coconut oil.
Heat coconut oil in a large skillet over medium heat. Sauté peppers until tender. Add spinach, garlic, chili powder, salt , and oregano. Sauté until spinach is wilted. Remove from heat.
In a large bowl, combine ground turkey, whisked egg, and almond flour. Use hands to mix it all up - don’t over mix. Add veggie mixture and mix (using hands) again. Move mixture to loaf pan and bake for 45 minutes to an hour.
