Spinach and bacon make a great addition to a simple egg scramble!
1 tsp. coconut oil
1 pce. uncured bacon
1 c. baby spinach
1/2 tsp. dried oregano
2 egg
sea salt & black pepper to taste
1 oz. mozzarella cheese
Heat the coconut oil over medium heat in a skillet. Add the spinach, and season with oregano. Cook, stirring, until spinach starts to darken and wilt. While the spinach mixture is cooking, beat the eggs in a bowl with a sprinkle of salt and pepper. Add the eggs and bacon to the skillet and cook, stirring constantly, until mixed and scrambled. Add the cheese when the eggs are nearly done.
