Modified from myrecipes.com - my husband is not a fish eater, but the relish is just perfect for masking any "fishy" taste.
1 1/2 c. pineapple
1 onion
1/3 c. roma tomatoes
1 rice vinegar
1 tbsp. cilantro, bunch, fresh, organic
1 sml. jalapeno pepper
4 lime
2 tsp. coconut oil
1 tbsp. seasoning, cajun, organic
1/4 tsp. sea salt
4 tsp. red pepper flakes
4 whitefish
Heat oil in a large skillet over medium-high heat. Combine Cajun seasoning, salt, and pepper in a small bowl. Sprinkle fish evenly with spice mixture. Add fish to pan, and cook for 2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
Combine pineapple and next 5 ingredients (through jalapeno) in a large bowl, stirring gently. Serve pineapple mixture with fish. Garnish with lime wedges.
