This is one of my favorite things lately!
1/2 c. mild cheddar cheese
2 tsp. garlic
1 zucchini
1 med. red bell pepper
1/2 sml. yellow onion
3 bch. green onion
2 c. diced tomatoes, canned
3 c. vegetable broth
1 c. vegetable broth
2 tbsp. seasoning or spices of your liking
Bring broth to a boil, and add rice. Turn down heat, and let simmer. Add all vegetables and spices, let simmer 50 minutes total (from when you put the rice in). Broth should be gone. Plate, and sprinkle some shredded cheese on top!
