Spicy Sweet Bean Salad

When I get tired of lettuce salads I'll make this recipe for a nice change. It is very satisfying, can be eaten hot or cold and the whole family seems to like it. It lasts for quite a while in the fridge. If you like more heat use fresh jalapenos.

Ingredients

    2 tsp. extra virgin olive oil

    1/4 red onion

    1 jalapeno pepper

    1 c. black beans, cooked or canned, organic

    1 c. green peas

    1 c. frozen corn

    sea salt & black pepper to taste

    1/2 red bell pepper

Directions

Put 2 tsp of olive oil in a large frying pan. Chop up 1/4 red onion and 1 or 2 pickled chopped jalapenos. Add the onion to the pan and saute a bit then add the jalapenos. When they are heated through add cooked black beans, the peas and the corn. (If you use frozen corn and peas add a little water to help the defrosting process.) Once everything is heated through (and most of the water is evaporated) add the sweet red pepper and salt and pepper to taste. Cook 1-2 more minutes. One serving is equal to a 1/2 cup. Simple, filling and very satisfying.
