Spicy Spanish Quinoa

Can add as much 'spice' as you like to this easy-to-make quinoa.


  • 14 1/2 oz. tomatoes, diced, canned, organic
  • 1/2 c. chili pepper, green, fire-roasted, organic
  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 3 garlic, fresh, organic
  • 1 med. onion, any type, organic
  • 1/2 c. quinoa, white, organic
  • 1 sml. bell pepper, green, fresh, organic
  • 1 tsp. chili pepper, dried, organic


Drain tomatoes and reserve juice. Heat olive oil; saute minced garlic and diced onions until onions are tender and translucent. Add reserved tomato juice and bring to a boil. Add quinoa and diced green peppers, and cook until liquid is absorbed - about 15 minutes or so. Add tomatoes, spices and serve.

Best served warm. EASY!!
