Spicy Spanish Quinoa

Can add as much 'spice' as you like to this easy-to-make quinoa.


  • 14 1/2 oz. diced tomatoes, canned
  • 1/2 c. fire-roasted green chili pepper
  • 1 tbs. extra virgin olive oil
  • 3 garlic
  • 1 med. onion
  • 1/2 c. white quinoa
  • 1 sml. green bell pepper
  • 1 tsp. dried chili pepper


Drain tomatoes and reserve juice. Heat olive oil; saute minced garlic and diced onions until onions are tender and translucent. Add reserved tomato juice and bring to a boil. Add quinoa and diced green peppers, and cook until liquid is absorbed - about 15 minutes or so. Add tomatoes, spices and serve.

Best served warm. EASY!!
