I found this recipe and it looks YUMMY! Shrimp with peanut butter sauce and brown rice, sounds delicious doesn't it?

  • 16 oz. cooked shrimp
  • 2 c. cooked brown rice
  • 1 lrg. red onion
  • 1 orange
  • 6 clove garlic
  • 2 tbs. fresh ginger
  • 2 tbs. extra virgin olive oil
  • 2 tbs. honey, raw
  • 4 tbs. peanut butter, creamy
  • 1/2 tsp. chili powder
  • 1/2 tsp. cayenne pepper
  • sea salt to taste
  • 1 fresh basil

Start with the rice. Put it in a pot with water and boil according to the instructions on the package.

Next, take the onion and dice it up. Heat up about 2 tablespoons of olive oil in a medium size sauce pan. Add about two thirds of the chopped onion to the sauce pan (you will need the remaining 1/3 for the spicy sauce). Keep it on a medium heat. Mince 5 cloves of garlic and add them to the sauce pan and saute until the onion starts turning slightly brown.

Take the cooked, peeled, shrimp and add it to the pan with the onion and garlic. Saute for another few minutes until the shrimp are warmed up all the way through.

Take the remaining onion and put it into blender. Place the peeled fresh ginger and remaining 1 clove of garlic into the blender. Add about 2 to 3 tablespoons of water and turn the blender on for a few seconds. It doesn’t have to be complete mush – let it have some texture. Add the peanut butter, honey, chili powder, cayenne pepper, 4 - 5 leaves of fresh basil, and the juice of 1/2 an orange into the blender (you can use the other half as a garnish). Turn the blender on blend for just a few seconds – the basil should be visible in the mixture.

Mix the spicy peanut sauce in the sauce pan with the shrimp. Add salt according to your own taste.

Serving the shrimp mixture with the rice, garnish with fresh basil and orange and ENJOY!
