Spicy Jicama, Onions, and Peppers

A great way to prepare jicama!


    2 tsp. coconut oil

    1 c. jicama, fresh, organic

    1/2 c. white onion

    1/2 c. green bell pepper

    2 clove garlic

    black pepper to taste

    paprika to taste

    cayenne pepper to taste

    1/2 c. water


Heat coconut oil in a skillet over medium-low heat. Press garlic cloves into oil and brown. Cut jicama into 1/4-inch cubes, add to the skillet, and brown in oil. When the jicama is browned, add chopped peppers and onions. Season with black pepper, cayenne pepper, and paprika. When the onions are translucent, carefully add water and simmer until jicama is tender (about 20 minutes).
