Spicy Chickpea Soup

Very yummy and easy to make

Ingredients

  • 38 oz. cooked chickpeas
  • 13 1/2 fl oz. canned coconut milk
  • 1/2 c. crushed tomatoes, canned
  • 1 red apple

Directions

In a blender or food processer combine drained chickpeas, coconut milk, chopped tomatoes, apple cilantro, garam masala and ginger. Purree until smooth. Transfer to a sauce pan. Stir in broth and bring to a simmer over med high heat. Season with salt and pepperto taste. You may garnish with a scoop of yogurt and green onions before serving if you wish.
