A great dish for a comfort dinner, and even better as leftovers!
2 bay leaf
1 jalapeno pepper
3 c. beef broth
2 tsp. cayenne pepper
sea salt & black pepper to taste
1 tbsp. tomato paste
1 lbs. beef, grass-fed or pastured, organic
1/2 c. tomato sauce
1 onion
2 celery stalk, fresh, organic
2 carrot
Using a Dutch oven, add vegetables and cook over medium high heat until soft (about 7 minutes).
Slightly increase heat and add tomato paste. Cook until the bottom of the pot is browning. Stir and scrape brown bits from the bottom.
Add the ground beef and cook until browned. (About 5 minutes) Add the tomato sauce, bay leaves and spices. Mix well.
Add the broth and bring to a boil and cook until reduced by half. (About 10 minutes) Cover and simmer for another 20 minutes.
You can always add more cayenne or jalapenos if it isn't as spicy as you'd like.
