A delicious fall twist on classic mashed potatoes.
2 lrg. sweet potato
1 pinch sea salt
3 tbsp. butter
1 tsp. cinnamon
1/8 tsp. ground ginger
1/8 tsp. nutmeg
Preheat oven to 400ºF. Line a baking sheet with parchment paper.
Scrub and dry sweet potatoes. Pierce the outside of each potato with a fork, and sprinkle with sea salt. Arrange potatoes on baking sheet, and bake for about 1 hour, until potatoes are cooked through.
Remove potatoes from oven. Cut each potato in half, scoop out the flesh, and place it in a bowl. Add butter, cinnamon, ginger, nutmeg, and sea salt. Mash the potatoes with the butter and seasonings (adjust seasonings to taste).
Serve warm.
