This is a pizza crust made with spelt flour. It make 2 pizza crusts the size of a cookie sheet if you like it on the thinner side.
1 tsp. sea salt
2 1/4 tsp. yeast, active, dry
1 tsp. honey, raw
1 c. water
2 c. spelt flour
2 tbsp. extra virgin olive oil
Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and honey in warm water. Let stand until creamy, about 10 minutes
Stir in flour, salt and oil. Beat until smooth. Turn on to floured surface and knead until smooth(less the 5 mins) cut in half and place in separate bowls with a little olive oil on bottom so the dough does not stick.. let it rest for up to 30 mins and then spread out on cookie sheet. Top with your topping and bake 15-20 mins until crust is golden brown.
