Spelt Pancakes

I used to make these light and fluffy pancakes for my kids. I amended the ingredients to be BD-friendly, so now they aren't quite as light and fluffy, but they're so much healthier!


    1 egg

    1 c. canned coconut milk

    2 tbsp. coconut oil

    1 c. spelt flour

    1/2 tsp. sea salt

    2 tbsp. baking powder

    2 tbsp. coconut sugar


Combine egg, milk, and oil. Add sifted dry ingredients. Beat until smooth. Bake on hot griddle. Makes 8-5 inch pancakes (give or take).
