Spelt Flour Tortillas

A delicious totally bd friendly flour tortilla for wraps, quesadillas or whatever you like! Only 4 I gradients and so so easy. Make the dough when ever you have time cuz it needs to sit for 30-60 mins before making. There's actually only 6 carbs for this whole recipe so it's more like 1 carb for 2 tortillas :)


    3 c. spelt flour

    1/2 tsp. baking powder

    1 tsp. sea salt

    1/3 c. coconut oil

    1 c. water


Stir together dry ingredients with a fork Add oil and stir into dry ingredients with a fork, making sure its evenly disrubuted Pour in warm water and stir with fork until it forms a ball. Dough will be a bit sticky but should still come together in a ball. Wrap in plastic wrap and let sit for 30 mins or more, you could make this dough the day before you need it or at breakfast if you want them for lunch or dinner. Once rested split dough into even pieces. Smaller if you want more small tortillas or less big ones if you want large ones. Heat up a large dry pan. No oil or butter or anything. As the pan is heating, roll one of the balls out on a well floured surface (like I said this stuff is sticky!) roll it quite thin about as thin as a regular tortilla then put into dry pan. As that one is cooking roll out the next. Cook about 30-40 seconds per side until you see bubbles puffing up and the bottom is getting golden brown spots. Continue untill all the dough is done. Make as fresh as possible as these done have the same kind of preservatives as the store bought kind so they might not last more than a day. But if they go stale you can cut them up and bake them with a bit of olive oil to make tortilla chips.
