My kids call this 'red rice' and really love it! It's so easy to make and is a great side dish for so many things. Hubby & Kid tested! :)
14 1/2 fl oz. vegetable broth
14 1/2 oz. stewed tomatoes, canned
1 tsp. coconut oil
1/2 sml. onion
1/4 green bell pepper
1 tsp. coconut oil
1 tsp. chili powder
1/4 tsp. dried oregano
1/4 tsp. garlic powder
sea salt to taste
1 c. long grain wild rice
In a small skillet melt coconut oil and saute onions and green pepper for a minute or two.
In a large saucepan, combine ALL ingredients plus the onions and peppers. Bring to a boil. Reduce heat; cover and Simmer for 20-25 minutes or until rice is tender and the liquid is absorbed.
We really love this simple rice dish. You could add anything to it that you'd like. Spice it up more if that suits you, too!
