Spaghetti Squash Casserole Side Dish

A delicious casserole side dish, pack with flavor and veggies! A great side dish for protein types because you can have a whole cup of this at dinner time along with some good meat!


  • 1 lrg. squash, spaghetti, fresh, organic
  • 1 bell pepper, red, fresh, organic
  • 1 zucchini, fresh, organic
  • 2 clove garlic, fresh, organic
  • 1 carrot, fresh, organic
  • 1 tomatoes, red, fresh, organic
  • 16 oz. tomatoes, crushed, canned, organic
  • 4 oz. cheese, mozzarella, whole fat, raw, grass-fed or pastured, organic
  • 1/4 cheese, parmesan, raw, organic
  • 2 tbs. olive oil, extra virgin, unrefined and unfiltered, organic


Sauté pepper, zuchinni, garlic, and carrot in olive oil. In a casserole dish mix, spaghetti squash, sautéed veggies, diced tomatoes, crushed tomato and about 3/4 of the mix of cheeses. Sprinkle the rest of the cheese on top and bake at 350 f for about 20-30 minutes. In the last few minutes switch the oven to broil and broil until cheese on top is brown and bubbly :) enjoy!!
