Spagetti Squash/ with Veg. Ragu and Buffalo meatballs
1 egg
1/4 c. cooked oatmeal
2 tbsp. extra virgin olive oil
1 sea salt & black pepper
1 green bell pepper
1 red onion
1 yellow squash
1 zucchini
2 med. spaghetti squash
3 clove garlic
28 oz. diced tomatoes, canned
fresh oregano to taste
fresh basil to taste
1 lbs. ground buffalo
After removing the seeds from spagetti squash, place face down on a sheet and bake at 375 for 45 minutes. If still to firm turn over and continue baking for 15 extra min. Then use fork to remove strands. While the squash prepares, add chopped bell,squash,zuccini,onion, and garlic to a sauce pan with olive oil. Saute until veg just starts to be clear (you want to keep the veg a bit crispy). Then add tomatoes and spices and bring to a boil. For the meatballs- In a large bowl combine meat, egg, oatmeal and spices. make into 1/2 inch balls and place in the boiling sauce. The meatballs will take about 10-15 minutes to cook through in the sauce. Place 1/2 cup of spagetti squash on serving dish with 2 ladle fulls of sauce. You should get about 5 meatballs to obtain your protein. Please enjoy!
