Super easy and hearty chicken crockpot cassserole. I have gotten raving reviews and recipe requests from every potluck I've to which I've ever taken it.
30 oz. corn, canned, organic
15 oz. canned black beans
1 salsa
6 chicken breast
1 c. mild cheddar cheese
Combine corn, beans, 1/4 cup chunky salsa in bottom of crock pot.
Place Chicken breasts on top of corn/bean mixture.
Top with remaining salsa.
Cover cook on high 3-4 hours
Or cook on low 7-8 hours or until meat juices run clear.
About 5 minutes before you're ready to eat, sprinkle with cheese, cover until cheese is melted.
Yield 6 servings . Each serving equals 220 calories, 6 g fat, 6 g fiber.
