I made this last night for dinner since i had a pack of fresh turkey cutlets from my local trader joe's. The salsa I bought from them as well and it is organic and was suprisingly inexpensive. you may add whatever salsa you choose for how much spice you like.
16 oz. turkey breast cutlet, free-range, organic
2 med. zucchini
2 tbsp. lime juice
sea salt & black pepper to taste
2 tbsp. coconut oil
1 c. fresh made salsa
Rinse turkey cutlets under water and shake off excess water. Season with salt and pepper.
Heat coconut oil in a skillet over medium high heat.
Sear turkey cutlets on both sides until almost cooked through. Transfer to a dish for later.
Drain excess liquid from skillet and add diced zucchini. Cook until tender.
Add salsa into the zucchini and heat slightly.
Add turkey cutlets back to the skillet and spoon some of the salsa mixture over cutlets.
Cover with lid and cook until turkey is completely cooked through.
During the last 5 minutes of cooking, squeeze the juice of one lime over turkey cutlet mixture. Serve hot, and enjoy!!
