Southwest Kale Salad

Kick your kale salad up a notch!

Ingredients

    1 tbsp. cilantro

    sea salt & black pepper to taste

    1 oz. avocado

    1 c. kale

    1/4 tsp. lemon juice

    1/4 tsp. lime juice

    1 tsp. extra virgin olive oil

    1/4 med. red bell pepper

    1/2 med. tomato

Directions

Add lemon juice, lime juice, and olive oil to chopped kale. Massage and let sit, so the kale will soften. Once kale has wilted a bit, add chopped pepper, chopped tomato, and chopped cilantro. Season with salt and pepper. Let sit for 30 minutes to let flavors combine and infuse. Top with chopped avocado.
