These are great for breakfast on the go. Eat with some almonds, Greek yogurt or eggs for a complete meal.
3 med. banana
1/3 c. applesauce
2 c. old-fashioned oats
1/4 c. canned coconut milk
1/2 c. raisins
1 tsp. vanilla extract
1 tsp. cinnamon
Preheat oven to 350°F. Line a baking sheet with parchment paper. Mash the ripe bananas with a fork. Stir in the applesauce, coconut milk, vanilla, and cinnamon; mix together well. Stir in the oats and raisins (or substitute dried cranberries, raw nuts, chocolate chips, etc. - or just leave them out). Spoon 16 cookies onto baking sheet, and bake for 15 to 20 minutes. Let cool completely before removing from the pan.
