A very filling snack perfect for a protein metabolism.
5 slc. uncured bacon
7 egg
1 c. spinach
1 c. white mushrooms
1 c. red bell pepper
1 c. onion
1 c. leek, fresh, organic
1 c. broccoli
1 tbsp. coconut oil
3 oz. cheese, any type
Chop the bacon and all the veg into cubes. Pour oil into pan and fry bacon and onion. When softened add rest of veg. When the mixture is softened pour into baking dish. Meanwhile whisk eggs and add a little bit of salt. Pour eggs on top of the vegetable mixture. Sprinkle with cheese and bake at 350 degrees F until set.
VARIATION Change the vegetables around. Tomato is great in the mix and so is sweet potato. Feta cheese is a great cheese to put on top.
