Yesterday I was in creative mood and came up with this delicious and filling dinner idea! Smoked chicken and healthy vegetables!
2 egg
1/2 avocado
4 oz. cherry tomato
2 tsp. extra virgin olive oil
1 tbsp. lemon juice
sea salt & black pepper to taste
1 chicken drumstick
Boil eggs and chop them. Shred chicken drumstick/breast. Chop avocado in small cubes. Cut cherry tomatoes in halves, Put everything in a bowl. Add olive oil, fresh lemon juice and spices.
It is very filling and delicious!
