Basic Irish mashed potato meal.
3 lbs. baking potatoes
1 bch. green onion
1 1/2 c. milk, raw or organic
6 tbsp. butter
Peel and boil potatoes.
Bring milk and chopped green onions (scallions) to a slow boil. Simmer mixture for 3-4 minutes, turn off heat, and leave to infuse.
Mash potatoes then stir in the onion milk. Add some butter, salt, and pepper to taste.
Serve in separate bowls. Make a "well" in the champ and place remaining butter in each well.
When eating, dip the champ into the well in the middle to add the melted butter, ENJOY!
