Slow-Cooked Chicken

Slow-cooked chicken for Sunday supper.


  • 4 lbs. chicken, whole, free-range, organic
  • sea salt, unrefined and pure to taste
  • pepper, white, fresh ground, organic to taste
  • 1/2 c. onion, any type, organic
  • 1/2 c. carrot, fresh, organic
  • 1/4 c. celery, fresh, organic
  • 3 clove garlic, fresh, organic
  • 3 thyme, fresh, organic
  • 3 tbs. lemon juice, pure, organic


Rinse the chicken inside and out under cool running water. Pat dry. Season the chicken liberally inside and out with sea salt and cracked white pepper. Place in a slow cooker. Scatter the diced onions, sliced or diced celery, diced carrots, peeled and smashed garlic, fresh thyme, and freshly squeezed lemon juice over top of chicken. Cover and cook on high for 4-5 hours.
