This recipe is bound to be a huge hit with even the pickiest eaters. You won’t miss the traditional white bread once you taste the combination of sweet potato, raw honey, and familiar "Sloppy Joe" spices.
3 med. sweet potato
1 tbsp. extra virgin olive oil
1/2 sml. onion
1 clove garlic
1/4 c. celery
1/2 med. green bell pepper
1/2 med. red bell pepper
1 1/2 lbs. ground beef
2 tsp. chili powder
2 tsp. ground cumin
sea salt & black pepper to taste
14 oz. diced tomatoes, canned
6 oz. tomato paste
2 tbsp. honey, raw
Preheat oven to 400ºF. Pierce washed sweet potatoes. Line baking sheet with parchment paper and bake sweet potatoes for 45 minutes.
Place skillet over medium heat and add olive oil. Sauté diced onions, minced garlic, and chopped celery for 5 minutes or until onions are tender. Add chopped bell peppers and ground beef; combine well. Add chili powder, cumin, sea salt, and pepper; cook for 10 minutes or until beef is browned.
Add diced tomatoes with liquid, tomato paste, and honey. Combine all ingredients and simmer on low-heat for 15 minutes.
Cut baked sweet potatoes in half and scoop out a portion of each to form small boats. Fill each sweet potato “boat” with the sloppy joe mixture and serve. Note: the scooped out sweet potato from each half is part of the meal.
