This is just about the fastest meatball recipe you will ever make. If you want to prepare ahead for the week, double the meatball recipe then store your leftovers in a large mouthed mason jar in the fridge.
1 lbs. ground beef
1 tbsp. dried sage
1 tbsp. dried oregano
1 tsp. sea salt
1 tsp. black pepper
25 oz. tomato sauce
8 oz. quinoa spaghetti
Preheat oven to 400ºF and line a baking sheet with parchment paper.
Pour tomato sauce of choice into medium sized pot and simmer on low for 45 minutes, stirring periodically.
Meanwhile, in a large bowl, combine ground beef, sage, oregano, salt, and pepper. Form 2-inch balls and arrange on the baking sheet. Bake meatballs for about 10-15 minutes then transfer them to sauce and cook for an additional 10-15 minutes.
While the meatballs are cooking in the sauce, boil a large pot of water and add pasta. Cook until tender.
To serve, pour tomato sauce and meatballs over cooked pasta.
