Just thought I'd share a way to saute spinach that is so good, you'll want to lick your plate! I know I do!
1 tsp. extra virgin olive oil
1 c. baby spinach
1 garlic
1 tsp. lemon juice
red pepper flakes to taste
Heat olive oil in a skillet on low to medium heat and then add garlic and brown it. (I love garlic, so I add a good teaspoon or so, but you can use less if you're not as big a fan as I am.) Next add baby spinach and heat until wilted. Remove from heat and add some sea salt (to taste), lemon juice, and red pepper flakes and mix. THIS IS SO GOOD! I love it for breakfast with scrambled eggs or served with salmon (on the side)! YUMMY! Try it - You'll love it!
