This is a quick and easy recipe with just a few ingredients, making it great for people on the go. AND it's very, very yummy!!!!
1/2 c. green bell pepper
1/4 c. red bell pepper
1/4 med. onion
1 garlic
1 tsp. coconut oil
2 oz. shrimp
1/4 c. canned coconut milk
sea salt & black pepper to taste
In a small skillet, saute minced garlic, thinly sliced bell peppers, and sliced onion in olive oil. Lower the heat and cook for about 3 minutes.
Add the coconut milk and let it simmer for 2 more minutes.
Increase the heat and add the shrimp, salt, and pepper. Cook for another 2 minutes.
Serving suggestion: serve with quinoa or brown rice.
