This is a spicy shrimp dish served over brown rice.
16 oz. diced tomatoes, canned
1 1/2 lbs. shrimp
1 sml. onion
1 sml. green bell pepper
2 garlic
2 tbsp. coconut oil
8 oz. tomato sauce
1 tsp. worcestershire sauce
1/4 tsp. red pepper flakes
1/2 tsp. dried thyme
Peel and devein shrimp. Chop the onions, green pepper, celery and garlic and saute in coconut oil until tender. Stir in diced tomato, tomato sauce, Worcestershire sauce, oregano, thyme and red pepper. Cook over medium heat, stirring occasionally about 15 minutes or until desired consistency. Stir in shrimp and simmer over medium heat 5 to 10 minutes or until shrimp are done.
*Optional - Serve over cooked brown rice.
