A very versatile dish. Great freshly made and AWESOME for leftovers.
4 c. broccoli
1 med. red bell pepper
2 lrg. tomato
4 tbsp. coconut oil
sea salt to taste
Italian seasoning to taste
1 tbsp. garlic
6 oz. rotini spelt pasta
1 lbs. shrimp
Boil the pasta in a pot of water for about 20 minutes.
Heat coconut oil in a separate large pot. Add broccoli florets, diced red pepper, chopped tomatoes, minced garlic, shrimp, and spices. Saute until the peppers are soft and the tomatoes boil down to liquid.
Mix in the cooked pasta. Stir well. Serve and enjoy!
