Warm shrimp + cold, crisp apple = a delicious, filling salad!
2 tbsp. red bell pepper
2 tbsp. carrot
2 tbsp. celery
4 oz. shrimp
1 tsp. coconut oil
1/2 c. water
1/2 med. Granny Smith apple
1/2 c. romaine lettuce
1 oz. avocado
Thaw and peel raw shrimp. Place water and coconut oil in small skillet and bring to boil. Add shrimp and lower heat to simmer. Cook until totally pink, about 5 minutes.
Thinly slice carrots, celery, and red bell pepper. Toss with romaine lettuce and arrange in a soup plate. Thinly slice the apple and arrange over a third of the salad. Thinly slice the avocado and arrange over a third of the salad. Place the warm shrimp over the remaining third of the salad. Eat immediately.
