Shredded Zucchini Crust Personal Pizzas

GO MEATLESS in a fantastic way! The smell alone makes your mouth water! Been craving pizza so bad, and this did the trick!


    2 c. zucchini

    3/4 c. coconut flour

    1 sml. onion

    1 clove garlic

    1 egg

    1/4 c. parmesan cheese

    sea salt & black pepper to taste

    2 c. tomato sauce


Preheat oven to 400°F. Line a baking sheet with foil. Shred the zucchini and place inside a couple paper towels to squeeze out excess moisture. Place shredded zucchini in a bowl, and sprinkle with salt and pepper. Add coconut flour, finely chopped onion, finely minced garlic, egg, and Parmesan cheese. Stir to combine. The mixture with be sticky once all mixed.
On a foil lined baking sheet, divide batter into 6 mounds on the parchment using a spoon or ice cream scoop. Then flatten each mound with a spoon or your hand to form 4 inch rounds. Bake for 15-20 minutes or so, until they are golden brown. Then turn to broil and place on the second highest rack in your oven. Broil on high for a few minutes, you want to crisp them up but watch carefully so they won’t burn. Flip the zucchini crusts over and broil for a few minutes again. Serve with marinara on top (amount is up to you) with an extra sprinkle of grated Parmesan cheese. Makes 6.
