Quick, easy & healthy! I used 2 oz of shredded chicken (leftovers from Sunday crockpot cooked chicken), chopped up 1 cup of cherry tomatoes and diced up 1 hard boiled egg then added 2 tablespoons of Trader Joes Whole Grain Dijon Mustard and ate it at room temp
