Sesame Ginger Chicken Salad

This was a recipe shared by a professional caterer who was hired to do a "heathy cooking demonstration" for the employees at our company. It is very light, full of fresh veggies, with an exotic tasting dressing. It could be used as a mid-day lunch, but I prefer to make it when I want to eat a light dinner.


    16 oz. chicken breast

    2 tbsp. chicken broth

    2 tbsp. tamari, organic

    1 med. carrot

    1 med. red bell pepper

    1 bch. broccoli

    2 green onion

    1/2 c. snow peas

    1 tsp. fresh ginger

    0 c. garlic chili sauce

    2 lime

    2 tbsp. extra virgin olive oil

    1/4 c. cilantro, bunch, fresh, organic

    2 tbsp. tamari, organic


Heat your oven to 300°F. Place chicken breast in a baking dish with chicken broth and Tamari sauce. Cook for 34-40 minutes, until the chicken is fully cooked. Cool and shred by hand.

While chicken is cooking, start cutting the vegetables (steamed broccoli, carrots, red pepper, green onions, and peas) and place the in a large bowl. Add the shredded chicken into the mix once it's cooled.

Mix together the dressing ingredients in a separate bowl.

Toss all of the vegetables and chicken with the dressing and serve.

Add a pinch of sea salt and/or a teaspoon of crushed red pepper for added flavoring.
