Seasoned Lime Cod and Cauliflower Rice

A delicious marinade for any white fish. Serve with cauliflower rice for a full meal.


    1/4 tsp. dried oregano

    1/4 tsp. garlic powder

    1/8 tsp. sea salt

    1/8 tsp. black pepper

    1 tsp. extra virgin olive oil

    4 oz. cod

    1 c. cauliflower rice

    1 tbsp. lime juice

    1 tsp. extra virgin olive oil

    1/2 tsp. dried parsley


Combine spices in a small bowl. Brush cod filet with olive oil, and then rub with spice mixture (use all of the spices). Refrigerate the cod in an airtight container for at least 30 minutes.

Preheat oven to 450ºF. Line a baking sheet with parchment paper. Place seasoned cod on baking sheet, and bake for 10-12 minutes, until cod is cooked through.

Serve cod on top of warm cauliflower rice (heat it up in a pan while cod is cooking).

Mix together lime juice and olive oil. Pour over cod and cauliflower rice.
