This salmon recipe may be simple to make, but it's super delicious!
2 tsp. avocado oil
sea salt & black pepper to taste
1/2 lbs. salmon
2 tsp. avocado oil
sea salt & black pepper to taste
3 c. kale
2 clove garlic
1/2 tsp. red pepper flakes
Heat avocado oil in a skillet over high heat. Season salmon with sea salt and pepper. When the oil is hot, place the fillets in the skillet flesh side down. Let salmon cook until a golden crust begins to form around the edges, about 5 minutes. Flip and cook for another 2 minutes. Let rest for 3-5 minutes before serving.
While the salmon is resting, heat avocado oil in a skillet over medium heat. Add minced garlic and red pepper flakes; let cook for 1 minute. Add chopped kale to the skillet and cook just until it wilts. Season to taste with sea salt and pepper.
To serve: plate the kale and top with a salmon fillet.
