1 med. onion
3 stlk. celery
2 med. carrot
1 clove garlic
1 c. white wine
2 tsp. extra virgin olive oil
1 c. tomato sauce
3 tbsp. fresh parsley
1 lbs. cod
Preheat oven to 350ºF.
Chop onion, celery, and parsley. Dice carrots. Mince garlic.
Saute vegetables (onions, celery, carrots) and garlic in a small amount of the wine until tender; add olive oil, tomato sauce, parsley, and remaining wine. Simmer 15 minutes.
Pour a quarter of the sauce into a baking dish; arrange fish on top. Cover with remaining sauce.
Bake, covered, for 15 to 20 minutes.
Notes: Feel free to use your favorite type of white fish (halibut, red snapper, sole, etc.). Broccoli shown in photo was an added side dish and not a part of the recipe.
