Savory Stuffed Butternut Squash

A tasty fall dish!


    1 med. butternut squash

    1/2 lbs. ground sausage

    1/2 med. onion

    1 clove garlic

    1/2 lrg. red apple

    1/2 sml. red bell pepper

    2 tsp. butter

    maple syrup to taste

    sea salt to taste

    1/2 c. mild cheddar cheese


Preheat oven to 375ºF.

Cut squash in half length-wise, remove seeds, place cut side down in baking dish with small amount of water, and cook for approximately 40-60 minutes, until soft to touch.

Meanwhile, put sausage in medium skillet with butter, chopped onion, and chopped garlic. Cook over medium heat, breaking up sausage as it cooks. When about half done, add grated apple. Continue cooking until sausage is cooked through. Remove to large bowl and allow to cool. Add maple syrup, sea salt, chopped red pepper, and cheese and mix thoroughly.

When squash is done cooking, remove from dish, cut side up. Drain remaining water from dish and wipe it dry.

Scoop out flesh, leaving about ¼ inch on skins (keep skins intact), and add flesh to sausage mixture in bowl. Fold the squash flesh in with the sausage mixture and other ingredients until everything is well incorporated then spoon back into the squash skins. Lightly oil baking dish, put filled squash skins in dish, and bake for 15 minutes.
