Wonderful meatloaf that substitutes fresh spinach for ordinary breadcrumbs.
sea salt & black pepper to taste
1 lbs. ground beef
1 c. baby spinach
4 clove garlic
2 tbsp. fresh parsley
1 med. onion
4 tbsp. tomato sauce
Preheat oven to 400°F.
Place the spinach, minced garlic, chopped parsley, and chopped onion in a food processor. Blend for about 1 minute, or until fully mixed.
Place ground beef in a large bowl and add the vegetable mixture. Add salt and pepper to your liking and mix together with your hands.
Mold mixture into a loaf pan and bake for 30 minutes or until cooked through.
Serve meatloaf topped with tomato sauce.
